Snowball cookies — those melt-in-your-mouth, buttery, nutty little delights dusted with powdered sugar that look just like fresh snowballs! Also known as Russian Tea Cakes or Mexican Wedding Cookies. Here’s a classic recipe for you:

❄️ Snowball Cookies

🍽️ Makes: About 24 cookies

⏱️ Time: 15 min prep + 15 min baking + cooling

🛒 Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1/2 cup powdered sugar (plus extra for rolling)

  • 1 tsp vanilla extract

  • 2 1/4 cups all-purpose flour

  • 1/4 tsp salt

  • 3/4 cup finely chopped nuts (walnuts, pecans, or almonds)

👩‍🍳 Instructions:

1. Prep oven and pan:

Preheat oven to 350°F (175°C).
Line baking sheets with parchment paper.

2. Mix butter and sugar:

In a large bowl, cream softened butter and powdered sugar until light and fluffy.
Add vanilla extract and mix.

3. Add dry ingredients:

Gradually add flour and salt, mixing until just combined.
Stir in chopped nuts.

4. Shape cookies:

Roll dough into 1-inch balls and place on prepared baking sheets about 1 inch apart.

5. Bake:

Bake for 12-15 minutes, until bottoms are lightly golden but not browned on top.

6. Roll in powdered sugar:

Let cookies cool for about 5 minutes on the sheet.
While still warm, roll cookies in powdered sugar to coat.
Place on wire rack to cool completely, then roll again in powdered sugar for a thick snowy coating.

💡 Tips:

  • Use finely chopped nuts for even texture.

  • Store cookies in an airtight container at room temperature for up to a week.

  • Perfect for holidays or anytime you want a sweet, tender treat!
