Here’s a Sour Cream Blueberry Coffee Cake recipe that’s super moist, rich with vanilla flavor, loaded with juicy blueberries, and topped with a buttery cinnamon streusel. It’s perfect for brunch, holidays, or anytime you need a cozy bake.

🧾 Ingredients:

For the Cake:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup full-fat sour cream

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 1/2 cups fresh or frozen blueberries (toss in 1 tsp flour if using frozen)

For the Streusel Topping:

  • 1/2 cup brown sugar

  • 1/2 cup all-purpose flour

  • 1 teaspoon cinnamon

  • 1/4 cup cold butter, cubed


👩‍🍳 Instructions:

1. Preheat Oven & Prep Pan:

  • Preheat oven to 350°F (175°C).

  • Grease a 9-inch round pan, 9×9 square, or 9×13 for a thinner cake.

2. Make Streusel:

  • In a small bowl, mix brown sugar, flour, and cinnamon.

  • Cut in cold butter with a fork or fingers until crumbly. Set aside.

3. Mix Cake Batter:

  • In a large bowl, cream together butter and sugar until light and fluffy (2–3 mins).

  • Beat in eggs one at a time, then add vanilla.

  • Mix in sour cream until smooth.

4. Combine Dry Ingredients:

  • In a separate bowl, whisk flour, baking powder, baking soda, and salt.

  • Gradually add dry ingredients to the wet, mixing just until combined.

5. Add Blueberries:

  • Gently fold in the blueberries. Don’t overmix.

6. Assemble Cake:

  • Pour batter into prepared pan and spread evenly.

  • Sprinkle streusel evenly over the top.

7. Bake:

  • Bake for 40–50 minutes (round pan) or 30–40 minutes (9×13)

  • Check doneness with a toothpick — it should come out clean or with a few moist crumbs.

8. Cool & Serve:

  • Let cool for 15–20 minutes before slicing.

  • Optional: dust with powdered sugar or drizzle with a vanilla glaze.

  • Use a bundt pan for a fancier presentation (adjust bake time to 50–60 minutes).
