Here’s a classic recipe for you:


🍑 Southern Peach Crumb Cake

Ingredients

For the crumb topping:

  • 1 cup all-purpose flour

  • ½ cup brown sugar, packed

  • ½ cup granulated sugar

  • 1 tsp ground cinnamon

  • ½ cup unsalted butter, cold and cut into small cubes

For the cake:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup milk

  • 2–3 cups fresh peaches, peeled and sliced (can substitute canned peaches, drained)


Instructions

1. Preheat oven

Preheat to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

2. Make crumb topping

In a bowl, combine flour, brown sugar, granulated sugar, and cinnamon.
Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs. Set aside.

3. Make the cake batter

In another bowl, whisk together flour, baking powder, and salt.
In a large bowl, beat softened butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Mix in vanilla extract.
Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.

4. Assemble

Spread half the cake batter evenly into the prepared pan.
Layer the sliced peaches over the batter.
Spread the remaining batter on top (it may look uneven, that’s okay!).
Sprinkle the crumb topping evenly over the top.

5. Bake

Bake for 45–50 minutes or until a toothpick inserted into the cake (not the topping) comes out clean.

6. Cool & serve

Let the cake cool before slicing. Serve warm or at room temperature, plain or with whipped cream or vanilla ice cream.


Tips

  • Use ripe but firm peaches to avoid too much juice in the cake.

  • For extra flavor, add a pinch of nutmeg or a splash of bourbon to the batter.

  • If peaches aren’t in season, frozen peaches (thawed and drained) work well too.
