🌶️ Spicy Collard Greens

Ingredients:

2 large bunches collard greens (about 2 lbs), washed, stems removed, and chopped

4 slices bacon, chopped (or 1–2 tablespoons bacon grease or oil)

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 smoked ham hock or 1 smoked turkey leg (optional for extra smoky flavor)

4 cups chicken or vegetable broth

2 tablespoons apple cider vinegar

Salt and black pepper, to taste

1 teaspoon sugar (optional, balances bitterness)
Instructions:

Cook bacon:
In a large pot or Dutch oven, cook chopped bacon over medium heat until crisp. Remove bacon bits and set aside, leaving bacon fat in the pot. (If not using bacon, heat 2 tablespoons oil.) -
Sauté aromatics:
Add onion to the bacon fat and sauté until translucent, about 5 minutes. Add garlic and red pepper flakes, cook 1 more minute until fragrant. -
Add greens and broth:
Add chopped collard greens, ham hock or smoked turkey (if using), broth, apple cider vinegar, sugar, salt, and pepper. Stir well. -
Simmer:
Bring to a boil, then reduce heat to low. Cover and simmer for 40–50 minutes until greens are tender. -
Finish:
Remove ham hock or turkey leg and shred meat to return to pot (optional). Stir in reserved bacon bits. Adjust seasoning with more salt, pepper, or vinegar to taste.
