🧀🌿 Spinach and Cheese Puff Pastry Squares

🧂 Ingredients:

1 sheet puff pastry, thawed (from a 17 oz/480g box)

1 tbsp olive oil or butter

2 cloves garlic, minced

1 small onion, finely diced (optional)

5 oz (140g) fresh spinach (or 1 cup thawed frozen spinach, squeezed dry)

½ cup ricotta cheese (or cottage cheese)

½ cup crumbled feta cheese
-
½ cup shredded mozzarella or cheddar
-
1 egg
-
Salt & pepper, to taste
-
½ tsp dried oregano or dill (optional)

1 egg, beaten (for egg wash)
🍳 Instructions:
1. Preheat Oven:

Preheat to 400°F (200°C). Line a baking sheet with parchment paper.
2. Cook the Spinach Mixture:

Heat olive oil or butter in a skillet over medium heat.

Add onion (if using) and sauté 2–3 minutes. Add garlic and cook 30 seconds more.

Add fresh spinach and cook until wilted (or just stir in thawed frozen spinach).

Season with salt, pepper, and herbs. Let cool slightly.
3. Mix the Filling:

In a bowl, combine spinach mixture with ricotta, feta, shredded cheese, and 1 egg. Mix well.
4. Prep the Puff Pastry:

Roll out thawed puff pastry on a lightly floured surface into a 10×10 inch square.

Cut into 9 equal squares (or 6 for larger ones).
5. Assemble:

Place a spoonful of filling in the center of each square.

Optional: fold into triangles and crimp the edges, or leave open-faced.

Brush edges (or tops) with beaten egg for golden color.
6. Bake:

Bake for 20–25 minutes, or until puffed and golden brown.
