🧀 Stack of Quesadillas

🛒 Ingredients:

8 large flour tortillas

3 cups shredded cheese (cheddar, Monterey Jack, or a blend)

2 cups cooked chicken, shredded (optional)

1 cup bell peppers, diced

1 cup onions, sautéed or raw, diced

1 cup black beans (rinsed and drained)

½ cup fresh cilantro, chopped

Cooking spray or a little oil for frying

Optional: salsa, sour cream, guacamole for serving

1. Prep the Filling:
Mix cheese, chicken (if using), bell peppers, onions, black beans, and cilantro in a bowl.
2. Assemble Quesadillas:

Heat a skillet over medium heat and lightly grease it.

Place one tortilla in the skillet, sprinkle a generous amount of the filling evenly over it, then top with another tortilla.

Cook until golden and crispy on one side (about 2–3 minutes), then carefully flip and cook the other side until cheese melts and tortillas are golden.
3. Stack & Slice:

Stack cooked quesadillas on a platter.

Cut into wedges (usually 6–8 per quesadilla).
