Here’s a tasty idea for a stack of quesadillas — perfect for a party platter or a hearty meal! You can layer them up with different fillings and slice them into easy-to-grab wedges.


🧀 Stack of Quesadillas

Makes: 8 large quesadillas | Prep Time: 15 mins | Cook Time: 10 mins


🛒 Ingredients:

  • 8 large flour tortillas

  • 3 cups shredded cheese (cheddar, Monterey Jack, or a blend)

  • 2 cups cooked chicken, shredded (optional)

  • 1 cup bell peppers, diced

  • 1 cup onions, sautéed or raw, diced

  • 1 cup black beans (rinsed and drained)

  • ½ cup fresh cilantro, chopped

  • Cooking spray or a little oil for frying

  • Optional: salsa, sour cream, guacamole for serving


👩‍🍳 Instructions:

1. Prep the Filling:

Mix cheese, chicken (if using), bell peppers, onions, black beans, and cilantro in a bowl.

2. Assemble Quesadillas:

  • Heat a skillet over medium heat and lightly grease it.

  • Place one tortilla in the skillet, sprinkle a generous amount of the filling evenly over it, then top with another tortilla.

  • Cook until golden and crispy on one side (about 2–3 minutes), then carefully flip and cook the other side until cheese melts and tortillas are golden.

3. Stack & Slice:

  • Stack cooked quesadillas on a platter.

  • Cut into wedges (usually 6–8 per quesadilla).

4. Serve:

  • Serve warm with your favorite dips: salsa, guacamole, sour cream.


🔄 Variations:

  • Use beef, shrimp, or just veggies.

  • Add jalapeños or hot sauce for spice.

  • Try a three-cheese blend with mozzarella, cheddar, and pepper jack.
