🥩 Steak Bites with Potatoes in Rich Gravy

Ingredients (Serves 4)

For the steak & potatoes:

  • 1½ lbs sirloin steak (cut into bite-sized cubes)
  • 1½ lbs baby Yukon gold potatoes (halved or quartered)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt & black pepper (to taste)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme (or 1 tbsp fresh)

For the rich gravy:

  • 3 tbsp butter
  • 3 tbsp flour
  • 3 cloves garlic (minced)
  • 2 cups beef broth (warm)
  • 1 tsp Worcestershire sauce
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ¼ tsp salt (adjust to taste)
  • Optional: ¼ cup heavy cream (for extra richness)

Instructions

1️⃣ Cook the Potatoes

  1. Bring salted water to a boil and cook potatoes 12–15 minutes until fork-tender.
  2. Drain and set aside.
  3. In a large skillet, heat 1 tbsp olive oil + 1 tbsp butter.
  4. Add potatoes, season with salt, pepper, and thyme.
  5. Sauté until golden and crispy on the edges (about 5–7 minutes). Remove and set aside.

2️⃣ Sear the Steak Bites

  1. Pat steak dry (important for browning).
  2. Season with salt, pepper, paprika, and garlic powder.
  3. Heat remaining olive oil in the same skillet over medium-high heat.
  4. Add steak in a single layer (work in batches if needed).
  5. Sear 2–3 minutes per side until browned but still tender.
  6. Remove steak and tent loosely with foil.

3️⃣ Make the Rich Gravy

  1. Reduce heat to medium.
  2. Add butter to the skillet.
  3. Stir in minced garlic and cook 30 seconds.
  4. Whisk in flour and cook 1–2 minutes (it should turn lightly golden).
  5. Slowly whisk in warm beef broth.
  6. Add Worcestershire, onion powder, pepper, and salt.
  7. Simmer 3–5 minutes until thickened.
  8. Stir in heavy cream (optional).

4️⃣ Bring It Together

  1. Return steak and potatoes to the skillet.
  2. Toss gently to coat in the gravy.
  3. Simmer 2–3 minutes to let flavors meld.

  • Buttered green beans
  • Roasted carrots
  • Crusty bread
  • Or over mashed potatoes for ultra comfort food
