Here’s a super easy and flavorful recipe for Stove Top Stuffing Meatloaf — a comforting classic with a shortcut twist! Using stuffing mix adds great seasoning and texture, making it perfect for busy weeknights or hearty family dinners.

🍽️🔥 Stove Top Stuffing Meatloaf

🧾 Ingredients (Serves 6–8):

  • 1 box (6 oz) Stove Top stuffing mix (any flavor, but savory herb or chicken work great)

  • 1 cup hot water

  • 2 lbs ground beef (can sub half with ground turkey or pork)

  • 2 large eggs

  • 1/2 cup ketchup (plus more for topping)

  • 1 small onion, finely diced (optional)

  • 1/2 tsp garlic powder (optional)

  • Salt & pepper to taste

🔪 Instructions:

1. Preheat oven:

  • Preheat to 350°F (175°C).

  • Lightly grease a loaf pan or line with parchment.

2. Prepare stuffing:

  • In a large bowl, combine stuffing mix and 1 cup hot water.

  • Let sit for 5 minutes to soften.

3. Mix meatloaf:

  • Add ground beef, eggs, ketchup, onion, garlic powder (if using), salt, and pepper to the stuffing.

  • Mix with your hands or a large spoon until well combined — don’t overmix.

4. Shape and bake:

  • Press mixture into a loaf pan or shape into a loaf on a lined baking sheet.

  • Spread a layer of ketchup or BBQ sauce on top if desired.

5. Bake:

  • Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).

6. Rest and slice:

  • Let rest for 10 minutes before slicing — this helps the juices redistribute.

🍴 Serving Suggestions:

  • Mashed potatoes and green beans

  • Roasted carrots or corn

  • Gravy on the side or drizzled on top

🧊 Storage:

  • Refrigerate leftovers up to 4 days

  • Freezes well in slices for meal prep — just reheat in the oven or microwave
