Strawberry Earthquake Cake

A Strawberry Earthquake Cake is a fun, gooey, and flavor-packed dessert that looks wild — like the earth cracked open and strawberry goodness bubbled up from inside. 🍓💥 It’s based on the classic “earthquake cake” concept, where the layers shift during baking, creating sweet pockets of cream cheese, cake, and fruit.

This easy strawberry twist is made with cake mix, cream cheese, and strawberry filling — no mixer needed!


🍓 Strawberry Earthquake Cake

📝 Ingredients

  • 1 box strawberry cake mix (plus ingredients listed on the box — usually eggs, oil, water)

  • 1/2 cup sweetened shredded coconut (optional, for texture)

  • 1/2 cup white chocolate chips (or chopped white chocolate)

  • 1 cup strawberry pie filling or fresh sliced strawberries tossed with a little sugar

  • 1 (8 oz) block cream cheese, softened

  • 1/2 cup unsalted butter, melted

  • 2 cups powdered sugar


👩‍🍳 Instructions

1. Preheat oven:

Preheat to 350°F (175°C). Grease a 9×13-inch baking dish.

2. Layer the base:

Sprinkle the coconut (if using) and white chocolate chips in the bottom of the pan.

3. Make cake batter:

Prepare the strawberry cake mix according to the package directions. Pour the batter evenly over the coconut/chocolate layer.

4. Add strawberries:

Drop spoonfuls of strawberry pie filling over the cake batter. Don’t stir — it will naturally swirl and sink during baking.

5. Cream cheese layer:

In a separate bowl, beat or whisk together the softened cream cheese, melted butter, and powdered sugar until smooth. Drop this mixture in dollops over the top of the batter.

6. Bake:

Bake for 45–50 minutes, or until the top is golden and the center is mostly set (it will still be gooey and crater-like — that’s normal!).

7. Cool slightly:

Let cool for at least 15–20 minutes before slicing. Serve warm, room temp, or chilled. Great with a scoop of vanilla ice cream or whipped cream!


🔁 Variations

  • Use chocolate chips instead of white for a chocolate-strawberry version.

  • Add chopped pecans or almonds for crunch.

  • Make it with lemon cake mix for a strawberry-lemon twist.
