🥔 Stuffed Mashed Potato Nests

🛒 Ingredients:

4 cups mashed potatoes (homemade or store-bought)

1 cup shredded cheddar cheese (or cheese of choice)

4 slices bacon, cooked and crumbled (optional)

2 green onions, chopped (optional)

1 egg (helps bind the potatoes)

Salt and pepper to taste

Butter or cooking spray for greasing

Optional fillings: sautéed mushrooms, cooked broccoli, diced ham, or cream cheese
👩🍳 Instructions:
1. Preheat Oven:
Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with butter or cooking spray.
2. Prepare Mashed Potato Mixture:
In a large bowl, mix mashed potatoes with egg, salt, pepper, and half of the shredded cheese. Stir in bacon and green onions if using.
3. Form the Nests:

Spoon about ¼ cup of the mashed potato mixture into each muffin cup.

Press the potatoes up the sides of the muffin cup to create a “nest” with a hollow center.
4. Add Filling:

Fill the hollow center of each nest with your choice of filling: more cheese, ham, sautéed veggies, or cream cheese.
5. Top and Bake:

Sprinkle remaining cheese over each nest.

Bake for 20–25 minutes or until the edges are golden brown and crispy.
6. Serve:

Let cool for a few minutes, then carefully remove from muffin tin with a spoon or knife.
