🌶 Stuffed Pepper Soup

Ingredients

  • 1 lb (450 g) ground beef or turkey
  • 1 medium onion, diced
  • 3 bell peppers (any color), diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz / 400 g) diced tomatoes
  • 1 can (8 oz / 225 g) tomato sauce
  • 4 cups beef or chicken broth
  • ½ cup rice (uncooked)
  • 1 tsp Italian seasoning
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Optional: pinch of red pepper flakes for heat
  • Fresh parsley for garnish

Instructions

1️⃣ Cook the meat

  • In a large pot, cook ground beef over medium heat until browned
  • Drain excess fat
  • Add onion and garlic; sauté 3–4 minutes until softened

2️⃣ Add peppers & seasonings

  • Stir in diced bell peppers, Italian seasoning, salt, and pepper
  • Cook 3–4 minutes until peppers slightly soften

3️⃣ Add liquids & rice

  • Pour in diced tomatoes, tomato sauce, and broth
  • Stir in uncooked rice
  • Bring to a boil, then reduce heat to simmer

4️⃣ Simmer

  • Cover and simmer 25–30 minutes, stirring occasionally
  • Rice should be tender, and flavors melded together

5️⃣ Serve

  • Taste and adjust seasoning if needed
  • Garnish with fresh parsley
  • Serve hot with crusty bread or cornbread

🌟 Tips

  • Rice: Can swap for quinoa or cauliflower rice for a lower-carb version
  • Cheese lovers: Sprinkle shredded cheddar on top before serving
  • Make it in a slow cooker: Brown meat and veggies first, then combine everything and cook on low 4–6 hours

Variations

  • Vegetarian: Use lentils instead of ground meat
  • Spicy: Add a chopped jalapeño or a dash of cayenne
  • Creamy version: Stir in ½ cup cream or Greek yogurt just before serving
