  • 1 can (14 oz / 400 g) diced tomatoes
  • 4 cups (1 L) beef or chicken broth
  • 1 cup uncooked rice (or cooked rice for faster cooking)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning or dried oregano
  • Optional: ½ tsp smoked paprika or red pepper flakes for heat

Instructions

1. Cook the Meat

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef or turkey and cook until browned.
  3. Drain excess fat if needed.

2. Sauté Vegetables

  • Add onion, bell peppers, and garlic to the meat.
  • Cook 5–7 minutes until vegetables soften.

3. Add Liquids & Seasoning

  • Stir in diced tomatoes (with juice), broth, salt, pepper, and Italian seasoning.
  • Bring to a simmer.

4. Add Rice

  • If using uncooked rice, add now and simmer 20–25 minutes until rice is tender.
  • If using pre-cooked rice, add in the last 5 minutes of cooking.

5. Adjust & Serve

  • Taste and adjust salt, pepper, or seasoning.
  • Optional: sprinkle with shredded cheese, fresh parsley, or a dollop of sour cream.
  • Serve hot with crusty bread.
