🍮 Sweet Alabama Pecan Cake Recipe

Ingredients

For the Cake:

  • 2 ½ cups all-purpose flour

  • 2 ½ tsp baking powder

  • ½ tsp salt

  • 1 cup unsalted butter, softened

  • 2 cups sugar

  • 4 large eggs

  • 1 tsp vanilla extract

  • 1 cup buttermilk

For the Pecan Topping / Glaze:

  • 1 cup brown sugar, packed

  • ½ cup unsalted butter

  • ¼ cup milk or cream

  • 1 tsp vanilla extract

  • 1 ½ cups chopped pecans, toasted


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

  2. Prepare the cake:

    • In a bowl, whisk together flour, baking powder, and salt.

    • In a large bowl, cream butter and sugar until light and fluffy.

    • Beat in eggs one at a time, then add vanilla.

    • Alternate adding dry ingredients and buttermilk, beginning and ending with dry ingredients. Mix until just combined.

  3. Bake:

    • Pour batter into prepared pan.

    • Bake 35–40 minutes, or until a toothpick comes out clean. Cool slightly.

  4. Prepare the pecan topping:

    • In a small saucepan over medium heat, melt butter and brown sugar together.

    • Stir in milk and vanilla. Bring to a gentle boil for 1–2 minutes.

    • Remove from heat and stir in toasted pecans.

  5. Assemble:

    • Pour the warm pecan glaze over the slightly cooled cake, letting it soak in.

    • Let the cake cool completely before slicing.


🍰 Serving Tips

  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

  • Can be made ahead — flavors actually deepen if you let it sit overnight.

  • For extra Southern flair, add a splash of bourbon to the glaze.
