🍠 Sweet Potato Lentil Burgers

🛒 Ingredients:

1 cup dried brown or green lentils

1 large sweet potato (about 1 cup mashed)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup breadcrumbs (use gluten-free if needed)

1/4 cup fresh parsley or cilantro, chopped

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil (plus more for cooking)

Optional: 1 egg or flax egg (1 tbsp ground flax + 3 tbsp water, mixed and rested 5 min) for binding

1. Cook lentils:

Rinse lentils well.

Add lentils to a pot with 2 cups water. Bring to boil, then simmer 20–25 min until tender but not mushy. Drain any excess water.
2. Cook sweet potato:

While lentils cook, peel and cube sweet potato.

Boil or steam until soft (about 10–15 minutes), then mash until smooth.
3. Mix ingredients:

In a large bowl, combine cooked lentils, mashed sweet potato, onion, garlic, breadcrumbs, parsley, cumin, paprika, salt, pepper, and olive oil.

Add egg or flax egg if using to help bind the mixture.
4. Form patties:

Shape the mixture into 6 equal-sized patties. If too sticky, add a bit more breadcrumbs.
5. Cook the burgers:

Heat a little olive oil in a skillet over medium heat.

Cook patties for 4–5 minutes per side until golden and heated through.
6. Serve:

Serve on buns with your favorite toppings: lettuce, tomato, avocado, cheese, and sauces like mayo, mustard, or vegan options.

Bake instead: place patties on a parchment-lined sheet and bake at 400°F (200°C) for 20–25 min, flipping halfway.
