Tender Chuck Roast Recipes

Here are a few tender chuck roast recipe ideas that turn this budget-friendly cut into flavorful, fall-apart delicious meals. Whether you’re using the oven, slow cooker, or Instant Pot, chuck roast becomes incredibly juicy when cooked low and slow.


🥩🍲 1. Classic Oven-Braised Chuck Roast

Perfect for Sunday dinner. Deep, rich flavor with fork-tender results.

Ingredients:

  • 3–4 lb chuck roast

  • Salt & pepper

  • 2 tbsp olive oil

  • 1 onion, sliced

  • 4 cloves garlic, smashed

  • 2 cups beef broth

  • 1 cup red wine or more broth

  • 3 sprigs thyme, 2 sprigs rosemary

  • 3 carrots, chopped

  • 2 celery stalks, chopped

  • Optional: potatoes or mushrooms

Directions:

  1. Preheat oven to 300°F (150°C).

  2. Season roast generously. Sear on all sides in hot oil.

  3. Remove meat; sauté onion, garlic, and veggies.

  4. Deglaze with wine, add broth & herbs.

  5. Return roast to pot, cover tightly with lid or foil.

  6. Braise in oven for 3–3.5 hours until fork-tender.

  7. Rest before slicing. Serve with veggies and gravy.


🐢 2. Slow Cooker Chuck Roast (Pot Roast Style)

Set it and forget it! Comes out tender every time.

Ingredients:

  • 3 lb chuck roast

  • 1 packet ranch seasoning

  • 1 packet au jus gravy mix

  • ½ cup unsalted butter (1 stick)

  • 4–6 pepperoncini peppers

  • Optional: carrots, potatoes

Directions:

  1. Place roast in slow cooker. Sprinkle with seasonings.

  2. Top with butter and pepperoncinis.

  3. Add veggies if using. No water needed.

  4. Cook on low for 8–9 hours or high for 4–5 hours.

  5. Shred and serve with juices over mashed potatoes or rice.

⚡ 3. Instant Pot Chuck Roast (Quick + Tender)

All the depth of a braised roast in a fraction of the time.

Ingredients:

Same as oven version, with:

  • 1 tbsp Worcestershire sauce

  • 1 tbsp tomato paste

Directions:

  1. Sear roast on sauté mode; remove.

  2. Sauté onion, garlic, and paste. Deglaze with broth and Worcestershire.

  3. Return roast, add herbs and pressure cook on high for 60–70 minutes.

  4. Natural release for 15–20 min.

  5. Shred and serve with sauce or thicken to make gravy.


🧄🔥 4. Garlic & Herb Chuck Roast (Stovetop or Dutch Oven)

Richly seasoned and slow-simmered with a garlic-forward flavor.

Bonus Rub:

  • 1 tbsp minced garlic

  • 1 tbsp chopped rosemary or thyme

  • 1 tsp smoked paprika

  • Salt & pepper

  • Olive oil to make a paste

Rub on roast, then brown and braise with broth and veggies as in the oven method.
