🍍🍗 Teriyaki Chicken and Pineapple Foil Packets
📋 Ingredients (Serves 4)

4 boneless, skinless chicken breasts (or thighs)

1 ½ cups pineapple chunks (fresh or canned, drained)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small red onion, sliced

1 cup broccoli florets (optional)

1/2 cup teriyaki sauce (store-bought or homemade – recipe below)

2 tbsp olive oil

Salt & pepper, to taste

Optional garnish: chopped green onions, sesame seeds, lime wedges

(Makes about 1/2 cup)

1/4 cup low-sodium soy sauce

2 tbsp honey or brown sugar

1 tbsp rice vinegar

1 tsp sesame oil
-
1 clove garlic, minced

1 tsp grated fresh ginger
-
1 tsp cornstarch + 1 tbsp water (for thickening)
To make: Combine ingredients in a small saucepan over medium heat. Bring to simmer and whisk until slightly thickened (2–3 mins).

1. Preheat

Grill: Preheat to medium-high.

Oven: Preheat to 400°F (200°C).
2. Assemble packets

Tear 4 large sheets of heavy-duty foil (about 12×18 inches each).

Lightly spray with nonstick spray or brush with oil.

In the center of each, layer:

1 chicken breast

Salt, pepper, and a drizzle of olive oil

Bell peppers, onion, pineapple, and broccoli (if using)

About 2–3 tbsp teriyaki sauce

3. Seal the packets

Fold long sides of foil over the filling, then fold in the ends to create a tightly sealed packet.
4. Cook

Grill: Place packets on grill and cook for 18–22 minutes, turning once halfway.

Oven: Bake on a sheet pan for 25–30 minutes, until chicken is cooked through (internal temp 165°F / 74°C).
5. Serve

Carefully open foil (watch the steam!)

Drizzle with more teriyaki sauce if desired

Garnish with green onions, sesame seeds, or a squeeze of lime

Serve as-is or over rice, noodles, or quinoa
