Here’s a super simple, fresh, and flavorful Tomato and Onion Salad — perfect as a side dish for grilled meats, sandwiches, or anything Mediterranean-inspired. It’s all about using fresh ingredients and letting them shine.


🍅 Tomato and Onion Salad

🧾 Ingredients:

  • 4 ripe tomatoes, sliced or chopped (beefsteak, heirloom, or Roma work well)

  • ½ red onion, thinly sliced (or use sweet onion for milder flavor)

  • 2 tbsp extra virgin olive oil

  • 1 tbsp red wine vinegar (or balsamic for a sweeter twist)

  • Salt and freshly ground black pepper, to taste

  • Fresh basil or parsley, chopped (optional)

  • Pinch of sugar (optional, to balance acidity)


👨‍🍳 Instructions:

  1. Prep the vegetables:

    • Slice tomatoes into wedges or thick rounds.

    • Thinly slice the onion into half-moons.

    • If onions are too sharp, soak them in ice water for 10 minutes, then drain.

  2. Toss and dress:

    • Combine tomatoes and onions in a serving bowl.

    • Drizzle with olive oil and vinegar.

    • Season with salt, pepper, and a pinch of sugar if desired.

    • Toss gently to combine.

  3. Add herbs (optional):

    • Sprinkle with chopped fresh basil or flat-leaf parsley for added color and freshness.

  4. Let it rest:

    • Let the salad sit for 10–15 minutes at room temperature before serving to allow flavors to meld.


🍽️ Serving Suggestions:

  • Great alongside grilled chicken, steak, fish, or burgers.

  • Serve with crusty bread to soak up the juices.

  • Add mozzarella, feta, or avocado for a heartier salad.
