🍮 Vanilla Pudding
Ingredients

2 ½ cups whole milk

½ cup granulated sugar

3 tbsp cornstarch

¼ tsp salt

3 large egg yolks

2 tbsp unsalted butter

2 tsp vanilla extract
Instructions
1. Mix dry ingredients

In a medium saucepan, whisk together sugar, cornstarch, and salt.

Slowly whisk in milk until smooth.
2. Cook the pudding

Place saucepan over medium heat.

Stir constantly until mixture begins to thicken and bubble, about 5–7 minutes.
3. Temper the egg yolks

In a small bowl, whisk egg yolks.

Gradually add a few tablespoons of the hot milk mixture to the yolks while whisking constantly (prevents curdling).

Slowly whisk the egg yolk mixture back into the saucepan.
4. Finish cooking

Cook for another 2–3 minutes, stirring constantly, until pudding is thick and smooth.

Remove from heat.

Stir in butter and vanilla extract until fully incorporated.
5. Chill and serve

Pour pudding into individual cups or a large bowl.

Cover with plastic wrap directly on the surface to prevent a skin from forming.
