Absolutely! A Walking Taco Casserole is the ultimate easy comfort food — it’s like taking everything you love about walking tacos (seasoned meat, cheese, chips, and toppings) and baking it into a layered, scoopable dish. Perfect for busy weeknights or potlucks!


🌮 Walking Taco Casserole

Serves: 6–8 | Prep Time: 15 mins | Cook Time: 25 mins


🛒 Ingredients:

  • 1 lb ground beef (or ground turkey)

  • 1 packet taco seasoning (or 2 tbsp homemade mix)

  • 1 can (10 oz) Rotel (diced tomatoes with green chiles), drained

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 ½ cups shredded cheddar cheese (or a Mexican blend)

  • 2 cups crushed corn chips (like Fritos)

  • ½ cup sour cream

  • Optional: chopped onions, jalapeños, or corn

For Serving/Toppings:

  • Shredded lettuce

  • Diced tomatoes

  • Sour cream

  • Sliced olives

  • Sliced green onions

  • Avocado or guacamole

  • Extra crushed chips


👩‍🍳 Instructions:

1. Preheat & Brown Meat

  • Preheat oven to 350°F (175°C).

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.

2. Season the Meat

  • Add taco seasoning, Rotel, and black beans to the beef. Simmer for 5–7 minutes to let flavors combine.

3. Layer the Casserole

In a greased 9×13-inch baking dish:

  • Spread crushed Fritos as the bottom layer.

  • Spoon the beef mixture evenly over the chips.

  • Spread sour cream over the top (you can swirl it in or spread gently).

  • Sprinkle shredded cheese over everything.

4. Bake

  • Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.

5. Top & Serve

  • Let cool slightly, then add your favorite fresh toppings.

  • Serve with extra chips on the side if desired.


🔄 Variations:

  • Spicy version: add jalapeños, hot sauce, or spicy taco seasoning.

  • Vegetarian: skip the meat and double the beans or use seasoned lentils.

  • Low-carb: replace chips with a cauliflower rice base and top with crushed low-carb chips at the end.
