🌮 Walking Taco Casserole

🛒 Ingredients:

1 lb ground beef (or ground turkey)

1 packet taco seasoning (or 2 tbsp homemade mix)

1 can (10 oz) Rotel (diced tomatoes with green chiles), drained

1 can (15 oz) black beans, drained and rinsed
-
1 ½ cups shredded cheddar cheese (or a Mexican blend)
-
2 cups crushed corn chips (like Fritos)
-
½ cup sour cream
-
Optional: chopped onions, jalapeños, or corn
For Serving/Toppings:

Shredded lettuce

Diced tomatoes
-
Sour cream
-
Sliced olives
-
Sliced green onions
-
Avocado or guacamole

Extra crushed chips
👩🍳 Instructions:
1. Preheat & Brown Meat

Preheat oven to 350°F (175°C).

In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
2. Season the Meat

Add taco seasoning, Rotel, and black beans to the beef. Simmer for 5–7 minutes to let flavors combine.
3. Layer the Casserole
In a greased 9×13-inch baking dish:

Spread crushed Fritos as the bottom layer.

Spoon the beef mixture evenly over the chips.

Spread sour cream over the top (you can swirl it in or spread gently).

Sprinkle shredded cheese over everything.
4. Bake

Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
5. Top & Serve

Let cool slightly, then add your favorite fresh toppings.

Serve with extra chips on the side if desired.
