Ingredients:

4 large flour tortillas

2 cups cooked shredded chicken or ground beef

1 can (15 oz) refried beans (optional)

1 ½ cups cooked rice (optional)

2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

1 can (10 oz) red enchilada sauce or chili sauce

1 small onion, diced

1 tsp ground cumin

1 tsp chili powder

Salt & pepper to taste

Sour cream, chopped cilantro, sliced jalapeños, and diced tomatoes for topping
Instructions:

Preheat Oven:
Preheat your oven to 375°F (190°C). -
Prepare Filling:
In a skillet, cook diced onion until soft. Add shredded chicken or ground beef, cumin, chili powder, salt, and pepper. Mix well and cook until heated through. -
Assemble Burritos:
Warm tortillas to make them pliable.
Lay out each tortilla and add a layer of refried beans (if using), then a scoop of rice, then the meat mixture, and a sprinkle of cheese. Roll up tightly. -
Place in Baking Dish:
