Ooh, those sound heavenly! Here’s a recipe for Zesty Lemon Meltaway Cookies — tender, buttery cookies with a bright lemon zing that just melt in your mouth. Perfect with tea or as a light dessert!


🍋 Zesty Lemon Meltaway Cookies

Makes: ~24 cookies | Prep Time: 15 mins | Chill Time: 1 hr | Bake Time: 12–14 mins


🛒 Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • ¾ cup powdered sugar (plus extra for dusting)

  • 1 tbsp lemon zest (from about 1–2 lemons)

  • 1 tbsp fresh lemon juice

  • 2 cups all-purpose flour

  • ½ tsp salt

  • 1 tsp vanilla extract (optional)


👩‍🍳 Instructions:

1. Prep & Chill

  • In a large bowl, cream together butter and powdered sugar until light and fluffy.

  • Mix in lemon zest, lemon juice, and vanilla extract (if using).

2. Add Dry Ingredients

  • Gradually add flour and salt, mixing just until combined.

  • Dough will be soft but firm enough to handle.

3. Shape Cookies

  • Roll dough into 1-inch balls and place on a parchment-lined baking sheet about 2 inches apart.

  • Flatten each ball slightly with the bottom of a glass or your palm.

4. Chill

  • Refrigerate the shaped cookies for at least 1 hour (helps them hold shape and improves texture).

5. Bake

  • Preheat oven to 350°F (175°C).

  • Bake chilled cookies for 12–14 minutes, until edges just start to turn golden.

6. Cool & Dust

  • Let cool on the baking sheet for 5 minutes, then transfer to wire racks.

  • Once cool, dust generously with powdered sugar for that meltaway finish.


✨ Tips:

  • For extra lemon punch, add a teaspoon of lemon extract.

  • Store in an airtight container for up to 5 days, or freeze for longer.
