Here’s a simple and delicious zucchini fritters recipe that’s crispy on the outside, tender inside, and perfect as a snack, side dish, or even a light main:


🥒 Zucchini Fritters Recipe

Ingredients:

  • 2 medium zucchinis (about 2 cups shredded)

  • 1 tsp salt (for drawing out water)

  • 1 egg

  • 1/4 cup grated Parmesan cheese (optional for flavor)

  • 1/4 cup chopped green onions or shallots

  • 1–2 cloves garlic, minced

  • 1/4 cup all-purpose flour (or use chickpea flour for gluten-free)

  • 1/4 tsp black pepper

  • 1/4 tsp baking powder (optional, makes them a bit fluffier)

  • Olive oil or vegetable oil (for frying)


🧑‍🍳 Instructions:

  1. Grate zucchini using a box grater. Place in a bowl and sprinkle with salt. Let sit for 10–15 minutes to draw out water.

  2. Squeeze out moisture: Wrap grated zucchini in a clean kitchen towel or cheesecloth and wring out as much liquid as possible. This step is crucial for crisp fritters.

  3. Mix batter: In a large bowl, combine the zucchini with egg, Parmesan, green onions, garlic, flour, pepper, and baking powder if using. Mix until well combined.

  4. Heat oil: In a large skillet, heat a thin layer of oil over medium heat.

  5. Fry fritters: Scoop about 2 tablespoons of batter per fritter into the pan. Flatten slightly with a spatula. Fry 2–3 minutes per side until golden brown.

  6. Drain: Remove and place on paper towels to drain excess oil.


🥄 Serving Ideas:

  • Serve with sour cream, Greek yogurt, or tzatziki.

  • Top with a fried egg for a brunch dish.

  • Great with a squeeze of lemon or a sprinkle of chili flakes.
