Herb & Cheese Quick Bread Recipe

Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp garlic powder (optional)
  • 1 tbsp fresh herbs (rosemary, thyme, parsley, or a mix), chopped
  • 1 cup (100 g) grated cheddar cheese (or your favorite cheese)
  • 1 cup (240 ml) buttermilk
  • 2 eggs
  • ¼ cup (60 ml) vegetable oil or melted butter

Instructions

1. Preheat Oven

  • Preheat oven to 350°F (175°C).
  • Grease or line a loaf pan (8×4 inches / 20×10 cm).

2. Mix Dry Ingredients

  • In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, herbs, and cheese.

3. Mix Wet Ingredients

  • In another bowl, beat together buttermilk, eggs, and oil/butter.

4. Combine

  • Pour wet ingredients into dry ingredients.
  • Stir just until combined—do not overmix. Batter should be thick but pourable.

5. Bake

  • Pour batter into prepared loaf pan.
  • Bake 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack.

6. Serve

  • Slice warm or at room temperature.
  • Delicious plain or with butter.

  • Extra flavor: Add sun-dried tomatoes, olives, or caramelized onions.
  • Cheese options: Cheddar, Gruyère, or Parmesan work well.
  • Storage: Keep in an airtight container at room temperature for 2–3 days or freeze slices for longer storage.
