🥣 Amish Snow Day Soup (Potato & Ham)

Ingredients

  • 4–5 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 carrots, sliced (optional but common)
  • 2 celery stalks, chopped (optional)
  • 1½–2 cups cooked ham, diced
  • 4 cups chicken broth (or water + bouillon)
  • 1½ cups milk (or evaporated milk for richness)
  • 2 tbsp butter
  • 2 tbsp flour
  • Salt and black pepper, to taste

Instructions

  1. Cook vegetables
    In a large pot, combine potatoes, onion, carrots, celery, and broth. Bring to a boil, then simmer 15–20 minutes until vegetables are tender.
  2. Add ham
    Stir in the diced ham and let it warm through.
  3. Make it creamy
    In a small pan, melt butter. Whisk in flour and cook 1 minute. Slowly whisk in milk until smooth. Add this to the soup.
  4. Simmer & season
    Simmer 5–10 minutes until slightly thickened. Season with salt and pepper.
