🧄🧀 Garlic Parmesan Potato Wedges

Ingredients

  • 4 large russet potatoes
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup freshly grated Parmesan (not the shelf kind)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp Italian seasoning (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Prep potatoes
    • Heat oven to 425°F (220°C).
    • Scrub potatoes and cut into wedges.
    • Pat dry well (important for crispiness).
  2. Season
    • Toss wedges with olive oil, garlic, salt, pepper, paprika, and seasoning.
  3. Bake
    • Arrange cut-side down on a lined baking sheet.
    • Bake 30 minutes, flip, then bake 15–20 more minutes until crispy.
  4. Parmesan finish
    • Sprinkle Parmesan over hot wedges.
    • Return to oven 3–5 minutes until cheese melts and lightly browns.
  5. Serve
    • Garnish with parsley if desired.

🔥 Extra Crispy Tips

  • Soak wedges in cold water 30 minutes, then dry completely
  • Use convection if you have it
  • For max crunch, sprinkle 1 tsp cornstarch with the seasoning
