Ingredients

  • 4 large eggs
  • 1 cup milk (or half-and-half for richness)
  • ½ cup all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp baking powder
  • Optional add-ins:
    • ¼ cup chopped onion
    • ¼ cup diced green chiles
    • ½ tsp paprika or garlic powder

Instructions

  1. Preheat
    • Heat oven to 350°F (175°C).
    • Grease a 9-inch pie dish.
  2. Cook sausage
    • Brown sausage in a skillet until fully cooked.
    • Drain excess grease.
  3. Layer
    • Spread sausage evenly in the pie dish.
    • Sprinkle cheeses over the sausage.
  4. Mix batter
    • Whisk eggs, milk, flour, baking powder, salt, and pepper until smooth.
    • Stir in any optional seasonings or add-ins.
  5. Assemble
    • Pour egg mixture over sausage and cheese.
  6. Bake
    • Bake 40–45 minutes, until set in the center and lightly golden.
  7. Rest
    • Let stand 10 minutes before slicing.
