🥘 Bacon, Leek, Tomato & Garlic Casserole

Ingredients

  • 6–8 slices bacon, chopped
  • 2 medium leeks, white and light green parts only, sliced
  • 4–5 garlic cloves, minced
  • 4 medium tomatoes, chopped (or 1 can diced tomatoes)
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper, to taste
  • 2 tbsp olive oil (if needed)
  • Optional: ½ cup grated cheese (Parmesan or Gruyère)
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven
    • 375°F (190°C)
    • Grease a medium baking dish
  2. Cook bacon
    • In a skillet over medium heat, cook bacon until crisp
    • Remove with a slotted spoon; leave 1–2 tsp bacon fat in pan
  3. Sauté leeks & garlic
    • Add leeks to bacon fat (or olive oil)
    • Cook 5–7 minutes until softened
    • Add garlic, cook 1 more minute
  4. Combine
    • Stir in chopped tomatoes, thyme, red pepper flakes, salt, and pepper
    • Simmer 5–7 minutes until slightly thickened
  5. Assemble casserole
    • Transfer leek-tomato mixture to baking dish
    • Sprinkle cooked bacon on top
    • Optional: top with grated cheese
  6. Bake
    • Bake 20–25 minutes until bubbling and cheese is golden (if using)
  7. Serve
    • Garnish with fresh parsley
    • Great with crusty bread, rice, or roasted potatoes

  • Add chicken or sausage for extra protein
  • Swap tomatoes for cherry tomatoes for a sweeter flavor
  • Make it vegetarian by omitting bacon and using smoked paprika
  • Leftovers taste great cold or reheated
