🍋 Lemon Meltaway Cookies

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup powdered sugar (plus extra for dusting)
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 cups all-purpose flour
  • ¼ tsp salt

Instructions

  1. Preheat oven
    350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter & sugar
    In a bowl, beat butter and powdered sugar until light and fluffy.
  3. Add flavor
    Mix in vanilla, lemon juice, and zest.
  4. Add dry ingredients
    Stir in flour and salt until a soft dough forms.
  5. Shape cookies
    Roll dough into 1-inch balls and place 2 inches apart on the sheet.
  6. Bake
    12–15 minutes, until edges are just set (cookies should remain pale).
  7. Cool & dust
    Let cookies cool 5 minutes on the sheet, then transfer to wire rack. Dust with powdered sugar while slightly warm.

💡 Tips

  • For extra zing, add a little lemon glaze: mix ½ cup powdered sugar with 1–2 tsp lemon juice and drizzle over cooled cookies.
  • Keep them in an airtight container — they stay soft for 3–4 days.
