This is a hearty, indulgent twist on classic meatloaf — it combines all the flavors of a bacon cheeseburger in one pan: juicy beef, melty cheese, smoky bacon, and a tangy ketchup glaze.


🛒 Ingredients (Serves 6–8)

Meatloaf:

  • 2 lbs (900 g) ground beef (80/20 recommended)
  • 1 cup breadcrumbs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce

Filling:

  • 1 cup shredded cheddar or American cheese
  • 6–8 strips bacon, cooked and chopped (or reserve some for topping)

Glaze:

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard

1️⃣ Preheat

Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.

2️⃣ Mix Meatloaf

  • In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, salt, pepper, and Worcestershire sauce.
  • Mix gently — don’t overwork the meat.

3️⃣ Layer Filling

  • Press half the meat mixture into the bottom of the loaf pan.
  • Sprinkle cheese and chopped bacon evenly over the layer.
  • Cover with remaining meat mixture and gently shape into a loaf.

4️⃣ Add Glaze

  • Mix ketchup, brown sugar, and mustard.
  • Spread evenly over the top of the meatloaf.

Optional: lay a few bacon strips on top for extra crunch.

5️⃣ Bake

  • Bake uncovered for 55–65 minutes or until the internal temperature reaches 160°F (71°C).
  • Let rest 10 minutes before slicing.

  • Mashed potatoes or roasted potatoes
  • Mac & cheese
  • Green beans or corn on the cob
  • Serve with pickles or ketchup for the full cheeseburger experience

💡 Tips for Maximum Flavor

  • Sauté onions first for sweeter flavor.
  • Use a mix of cheddar and mozzarella for melty gooeyness.
  • For a smoky twist, add smoked paprika to the meat mixture.
  • Wrap the loaf in foil for the first 30 minutes for extra moisture, then uncover to brown the top.
