🥞 Classic Fluffy Pancakes

A quick, easy, and versatile breakfast — perfect for weekends or a cozy morning.

🛒 Ingredients (Makes ~8 pancakes)

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 ¼ cups milk
  • 1 large egg
  • 3 tbsp melted butter (plus extra for cooking)
  • 1 tsp vanilla extract (optional)

👩‍🍳 Instructions

1️⃣ Mix Dry Ingredients

  • In a large bowl, combine flour, baking powder, salt, and sugar.

2️⃣ Mix Wet Ingredients

  • In another bowl, whisk milk, egg, melted butter, and vanilla.

3️⃣ Combine

  • Pour wet ingredients into dry ingredients.
  • Stir gently until just combined — some lumps are okay. Overmixing makes pancakes tough.

4️⃣ Cook Pancakes

  • Heat a nonstick skillet or griddle over medium heat.
  • Grease lightly with butter or oil.
  • Pour ~¼ cup batter per pancake.
  • Cook 2–3 minutes until bubbles form on top and edges look set.
  • Flip and cook another 1–2 minutes until golden.

5️⃣ Serve

  • Serve warm with syrup, fresh fruit, whipped cream, nut butter, or chocolate chips.

💡 Tips

  • For extra fluffiness: separate the egg, beat the white to soft peaks, and fold in at the end.
  • Add-ins: blueberries, chocolate chips, or bananas can be mixed in before cooking.
  • Keep cooked pancakes warm in a low oven (200°F / 90°C) until ready to serve.
