🍫 Homemade Chocolate-Covered Caramel Clusters

Chewy, gooey, crunchy — and easy to make at home.

🛒 Ingredients

  • 1½ cups soft caramels (store-bought or homemade)
  • 1–2 tbsp heavy cream (if melting caramels)
  • 1½ cups chopped nuts (pecans, almonds, or peanuts)
  • 2 cups chocolate chips (dark, milk, or semi-sweet)
  • 1 tsp coconut oil (optional, for smoother melting)
  • Sea salt (optional, for topping)

👩‍🍳 Instructions

1️⃣ Make the Caramel Nut Centers

  1. Line a baking sheet with parchment paper.
  2. If using wrapped caramels, melt them with 1–2 tbsp cream in the microwave (30-second bursts, stirring between).
  3. Stir in chopped nuts until well coated.
  4. Drop spoonfuls onto the parchment paper.
  5. Refrigerate 20–30 minutes until firm.

2️⃣ Melt the Chocolate

  • Microwave in 20–30 second intervals, stirring each time.
  • Add coconut oil if you want a thinner coating.

3️⃣ Dip & Set

  1. Drop each caramel cluster into melted chocolate.
  2. Coat fully and lift out with a fork.
  3. Place back on parchment paper.
  4. Sprinkle a tiny pinch of sea salt if desired.
  5. Refrigerate 20–30 minutes until set.

💡 Tips

  • Use dark chocolate (70%+) for a less sweet, richer flavor.
  • Add shredded coconut or crushed pretzels for texture.
  • Store in an airtight container in the fridge up to 1 week.
