🍫 Homemade Chocolate-Covered Caramel Clusters
Chewy, gooey, crunchy — and easy to make at home.
🛒 Ingredients
- 1½ cups soft caramels (store-bought or homemade)
- 1–2 tbsp heavy cream (if melting caramels)
- 1½ cups chopped nuts (pecans, almonds, or peanuts)
- 2 cups chocolate chips (dark, milk, or semi-sweet)
- 1 tsp coconut oil (optional, for smoother melting)
- Sea salt (optional, for topping)
👩🍳 Instructions
1️⃣ Make the Caramel Nut Centers
- Line a baking sheet with parchment paper.
- If using wrapped caramels, melt them with 1–2 tbsp cream in the microwave (30-second bursts, stirring between).
- Stir in chopped nuts until well coated.
- Drop spoonfuls onto the parchment paper.
- Refrigerate 20–30 minutes until firm.
2️⃣ Melt the Chocolate
- Microwave in 20–30 second intervals, stirring each time.
- Add coconut oil if you want a thinner coating.
3️⃣ Dip & Set
- Drop each caramel cluster into melted chocolate.
- Coat fully and lift out with a fork.
- Place back on parchment paper.
- Sprinkle a tiny pinch of sea salt if desired.
- Refrigerate 20–30 minutes until set.

- Use dark chocolate (70%+) for a less sweet, richer flavor.
- Add shredded coconut or crushed pretzels for texture.
