🍲 French Onion Pot Roast

Ingredients

  • 3–4 lb Beef Chuck Roast
  • 4 large Onions, thinly sliced
  • 4 cloves Garlic, minced
  • 2 tablespoons Butter or oil
  • 2 cups Beef Broth
  • 1 cup Red Wine (optional, can use more broth)
  • 2 teaspoons Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoons Flour (for thickening)

Instructions

1️⃣ Sear the roast

  • Heat butter or oil in a large skillet over medium-high heat.
  • Brown the roast on all sides (about 3–4 minutes per side).

2️⃣ Caramelize onions

  • In the same skillet, cook onions until golden brown, about 10 minutes.
  • Add garlic and cook 1 more minute.

3️⃣ Combine in slow cooker or pot

  • Place roast in slow cooker or Dutch oven.
  • Pour onions, garlic, beef broth, wine, thyme, salt, and pepper over the top.

4️⃣ Cook

  • Slow cooker: Low 8 hours or High 5 hours until beef is tender.
  • Oven: Cover and bake at 325°F (160°C) for 3–4 hours.

5️⃣ Thicken sauce (optional)

  • Remove roast and mix 2 tablespoons flour into a small amount of sauce.
  • Stir back into pot and simmer until thickened.

6️⃣ Serve

  • Slice roast and serve with caramelized onions and rich sauce.
  • Perfect with Mashed Potatoes or Roasted Vegetables.

  • Use a mix of yellow and sweet onions for deeper flavor.
  • Add a splash of Worcestershire Sauce or Soy Sauce to enhance umami.
  • Let the roast rest 10–15 minutes before slicing to keep it juicy.
