Here’s a comforting Baked Loaded Mashed Potato Casserole topped with melted cheddar—perfect for family dinners or holidays. 🥔🧀

Ingredients

  • 4 cups Mashed Potatoes (fresh or leftover)
  • 1 cup Cheddar Cheese, shredded
  • ½ cup Sour Cream
  • 4 slices cooked Bacon, crumbled
  • 2 tablespoons Butter, melted
  • 2 Green Onions, chopped
  • ½ teaspoon Garlic Powder
  • Salt and Black Pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a bowl, mix mashed potatoes, sour cream, butter, garlic powder, salt, and pepper.
  3. Stir in half of the cheddar cheese, half of the bacon, and half of the green onions.
  4. Spread the mixture evenly in the baking dish.
  5. Top with the remaining cheddar cheese and bacon.
  6. Bake for 20–25 minutes, until the cheese is melted and bubbly.
  7. Sprinkle the remaining green onions on top before serving.

Tips

  • For extra creaminess, mix in a little Cream Cheese.
  • Add steamed Broccoli or sautéed mushrooms for more flavor and texture.
  • This casserole is perfect for using leftover mashed potatoes.
