🍚 Classic Rice Pudding

Ingredients (Serves 4–6)

  • 1 cup white rice (short-grain or medium-grain works best)
  • 4 cups milk (dairy or plant-based)
  • 1/2 cup sugar

  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 cup raisins or dried fruit (optional)

Instructions

  1. Cook the rice
    • In a medium saucepan, combine rice and 2 cups of water.
    • Bring to a boil, then reduce heat to low and simmer until water is absorbed (~10–12 minutes).
  2. Add milk and sugar
    • Stir in the milk, sugar, and salt.
    • Cook over medium-low heat, stirring frequently to prevent sticking.
  3. Simmer until creamy
    • Continue cooking for 20–25 minutes until the rice is soft and the mixture is creamy.
    • Add raisins halfway through if using.
  4. Add flavor
    • Stir in vanilla extract and a pinch of cinnamon (if desired).
    • For extra creaminess, stir in a tablespoon of butter or a splash of cream.
  5. Serve
    • Can be served warm or chilled.
    • Garnish with a sprinkle of cinnamon, nutmeg, or a few fresh berries.

  • Coconut Rice Pudding: Replace 1 cup of milk with coconut milk for a tropical twist.
  • Brown Sugar & Maple Syrup: Use brown sugar or a touch of maple syrup instead of white sugar.
  • Baked Version: After cooking, transfer to a greased ovenproof dish, top with a little sugar, and bake at 350°F (175°C) for 20–25 minutes until slightly caramelized.
