Ingredients

  • 1 lb (450 g) mushrooms, sliced (cremini or button)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 1 tsp Italian seasoning (or mix of thyme, rosemary, oregano)
  • Salt and pepper, to taste
  • Fresh parsley or basil, chopped, for garnish

Instructions

  1. Sauté Mushrooms
    • Heat olive oil and butter in a large skillet over medium heat.
    • Add mushrooms and cook until golden brown (~5–7 minutes), stirring occasionally.
  2. Add Aromatics
    • Stir in garlic and onion, cook until fragrant and soft (~2 minutes).
    • If using sun-dried tomatoes, add them now.
  3. Make Creamy Sauce
    • Reduce heat to low, add heavy cream, Parmesan, and Italian seasoning.
    • Stir and simmer for 2–3 minutes until the sauce thickens slightly.
  4. Season and Serve
    • Taste and adjust salt and pepper.
    • Garnish with fresh parsley or basil before serving.

Tips

  • For extra richness, stir in a splash of white wine before adding the cream.
  • Works well as a side dish, pasta sauce, or sandwich topping.
  • Add a pinch of red pepper flakes if you like some heat.
