Marinated cucumber salad

Here’s a simple and delicious marinated cucumber salad recipe you can make in minutes. It’s crisp, tangy, and perfect as a side dish.


Ingredients

  • 2 medium cucumbers, thinly sliced (English or Persian cucumbers work best)
  • 1/2 small red onion, thinly sliced
  • 1/4 cup rice vinegar or apple cider vinegar
  • 1 tablespoon sugar (or honey)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped (optional but highly recommended)
  • 1 teaspoon sesame seeds (optional for garnish)

Instructions

  1. Prepare the cucumbers:
    Slice cucumbers thinly. If you want them extra crisp, sprinkle with a little salt and let them sit for 10 minutes, then gently squeeze out excess water.
  2. Mix the dressing:
    In a small bowl, whisk together vinegar, sugar, salt, and pepper until sugar dissolves.
  3. Combine:
    In a large bowl, toss cucumbers and onions with the dressing. Add dill and mix gently.
  4. Marinate:
    Cover and refrigerate for at least 30 minutes. For best flavor, let it marinate 1–2 hours.
  5. Serve:
    Sprinkle with sesame seeds if desired and serve chilled.

💡 Tips:

  • Add a pinch of red pepper flakes for a little heat.
  • Thinly sliced radishes or carrots can add color and crunch.
  • This salad keeps in the fridge for up to 2 days.
