Here’s a simple, hearty recipe for a Beef and Rice Casserole—comfort food made easy!

🥘 Beef and Rice Casserole

🧾 Ingredients (Serves 4–6)

  • 1 lb (450g) ground beef
  • 1 cup uncooked rice (white or brown)
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (optional)
  • 2 cloves garlic, minced
  • 1 can (14 oz / 400g) diced tomatoes
  • 1 cup beef broth or water
  • 1 tsp salt, ½ tsp black pepper
  • 1 tsp paprika or Italian seasoning
  • 1 cup shredded cheese (cheddar, mozzarella, or mix)
  • 2 tbsp olive oil

👩‍🍳 Instructions

1. Preheat Oven

  • Preheat oven to 350°F / 175°C

2. Cook Beef

  • In a skillet, heat olive oil
  • Add onion, bell pepper, garlic, sauté until soft
  • Add ground beef, cook until browned
  • Drain excess fat

3. Combine Ingredients

  • Stir in uncooked rice, diced tomatoes, beef broth, and seasonings
  • Mix well and transfer to a greased casserole dish

4. Bake

  • Cover with foil and bake 35–40 minutes until rice is tender
  • Remove foil, sprinkle cheese on top, bake another 5–10 minutes until melted

5. Serve

  • Let rest 5 minutes before serving
  • Garnish with fresh parsley or green onions if desired

💡 Tips

  • For extra flavor, sauté rice briefly in olive oil before adding to the casserole
  • Use leftover cooked rice to shorten baking time
  • Add frozen vegetables for a one-pan meal

If you want, I can make a “quick 30-minute version” of this casserole using pre-cooked rice and minimal prep—perfect for busy weeknights. Do you want me to do that?
