🥣 Ingredients

Cake:

  • 1 cup rolled oats
  • 1½ cups boiling water
  • ½ cup butter (softened)
  • 1 cup brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 tsp vanilla extract

  • ½ cup butter
  • 1 cup brown sugar
  • ¼ cup milk
  • 1 cup shredded coconut
  • ½ cup chopped walnuts or pecans (optional)
  • 1 tsp vanilla extract

👨‍🍳 Instructions

1. Prepare oats

  • Pour boiling water over oats
  • Let sit for 10–15 minutes to soften

2. Make batter

  • Cream butter + sugars until fluffy
  • Add eggs and vanilla
  • Mix in soaked oats
  • Add flour, baking soda, cinnamon, and salt
  • Stir until combined

3. Bake

  • Pour into a greased 9×13 pan
  • Bake at 175°C (350°F) for 30–35 minutes
  • Cake is done when a toothpick comes out clean

4. Make topping

  • In a saucepan, melt butter
  • Add brown sugar + milk, bring to a gentle boil
  • Stir in coconut, nuts, and vanilla

5. Finish cake

  • Spread topping over warm cake
  • Broil for 1–3 minutes until bubbly and golden
