Creamy lemon squares

Creamy lemon squares are a sweet-tart dessert with a buttery base and smooth lemon filling on top—kind of like a cross between lemon bars and cheesecake.


🍋 Creamy Lemon Squares

Ingredients

For the base:

  • 1 cup flour
  • ½ cup butter (melted)
  • ¼ cup sugar
  • Pinch of salt

For the filling:

  • 2 eggs
  • ¾ cup sugar
  • 2–3 tbsp flour or cornstarch
  • ½ cup fresh lemon juice
  • 1 tbsp lemon zest
  • ½ cup cream cheese or condensed milk (for extra creaminess)

👩‍🍳 Method

  1. Prepare the base
    • Mix flour, sugar, salt, and melted butter.
    • Press into a lined baking tray.
    • Bake at 180°C for 10–12 minutes until lightly golden.
  2. Make the filling
    • Whisk eggs and sugar.
    • Add lemon juice, zest, flour, and cream cheese/condensed milk.
    • Mix until smooth.
  3. Bake again
    • Pour filling over the warm base.
    • Bake for 20–25 minutes until set (slightly wobbly in center is fine).
  4. Cool & chill
    • Let it cool completely.
    • Refrigerate for at least 2 hours.
  5. Serve
    • Cut into squares.
    • Dust with powdered sugar if you like.

  • Fresh lemon juice = best flavor
  • Chill before cutting for clean squares
  • Add more zest if you want stronger lemon taste
