Fried bologna sandwich

This Southern and Midwestern classic takes simple ingredients — thick-cut bologna, white bread, and a hot skillet — and turns them into something downright crave-worthy.

🥪 Classic Fried Bologna Sandwich

🧈 Ingredients

(Makes 1 sandwich — scale up as needed)

  • 1–2 slices thick-cut bologna (¼ inch thick each, or a few thin slices stacked)

  • 2 slices white sandwich bread (or Texas toast for extra heartiness)

  • 1 tablespoon butter or oil

  • 1 slice American cheese (optional but classic)

  • 1–2 teaspoons yellow mustard or Dijon mustard

  • Pickles, onion slices, or tomato (optional add-ons)

  • Salt & pepper to taste


🍳 Instructions

  1. Prepare the skillet:
    Heat a skillet or griddle over medium heat. Add a touch of butter or oil.

  2. Score the bologna:
    Use a knife to cut 3–4 small slits around the edges of each slice of bologna (this keeps it from puffing up like a balloon while frying).

  3. Fry the bologna:
    Place the slices in the hot skillet.
    Fry for about 1–2 minutes per side, until it’s browned and a little crispy around the edges.
    If you like, add a slice of American cheese on top near the end so it melts beautifully.

  4. Toast the bread:
    While the bologna cooks, butter your bread and toast it right in the same pan or in a toaster until golden.

  5. Assemble the sandwich:
    Spread mustard on one slice of bread (or mayo if that’s your style).
    Layer on the fried bologna (and melted cheese, if using).
    Add pickles, tomato, or onions if you want a little crunch and tang.
    Top with the second slice of bread.

  6. Serve hot:
    Slice diagonally, grab a napkin, and dig in — this sandwich is best enjoyed fresh off the skillet!
