🧾 Ingredients

  • 500g beef (stew meat or chuck), cut into bite-sized pieces
  • 2 tbsp oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 1 tsp dried thyme or mixed herbs
  • 1 cup egg noodles (or any noodles)
  • 1 tbsp flour (optional, for thickening)
  • Fresh parsley (optional, for garnish)

🍲 Instructions

  1. Brown the beef
    Heat oil in a large pot over medium-high heat. Add beef and sear until browned on all sides. Remove and set aside.
  2. Sauté aromatics
    In the same pot, cook onions until soft, then add garlic and cook for another minute.
  3. Build the stew
    Stir in tomato paste, then return beef to the pot. Add carrots, potatoes, broth, salt, pepper, paprika, and herbs.
  4. Simmer
    Bring to a boil, then reduce heat, cover, and simmer for 45–60 minutes until beef is tender.
  5. Add noodles
    Add noodles and cook for 8–10 minutes until tender.
  6. Thicken (optional)
    Mix flour with a little water and stir into the stew. Simmer a few more minutes until thickened.
  7. Serve
    Garnish with parsley and serve hot.

💡 Tips

  • For deeper flavor, let it simmer longer on low heat.
  • You can swap potatoes for mushrooms or add peas for variation.
  • Works great with leftover beef too.
