1. Bake the cake

  • Grease a 9×13-inch baking dish.

  • Let cool completely.

2. Make pineapple topping

  • In a saucepan, combine 2nd can of crushed pineapple, sugar, and (optional) cornstarch.

  • Bring to a simmer and cook 3–5 minutes until slightly thickened. Remove from heat.

  • Stir in vanilla.

  • Spread evenly over cooled cake.

3. Make coconut cream topping

  • Beat cream cheese until smooth.

  • Fold in Cool Whip. Mix gently until combined.

  • Spread over pineapple layer.

  • Sprinkle generously with shredded coconut.

4. Chill

  • Refrigerate at least 2 hours, ideally overnight, for best flavor and texture.
