Chicken Salad Croissant

Here’s a delicious and fresh Chicken Salad Croissant recipe—perfect for lunch, brunch, or meal prep!


🥐 Chicken Salad Croissant Sandwiches

Ingredients (makes 4–6 sandwiches)

Chicken salad:

  • 2 cups cooked chicken, diced or shredded (rotisserie works great!)

  • ½ cup mayonnaise

  • 1–2 tbsp Dijon mustard (optional)

  • 1–2 stalks celery, finely chopped

  • ¼ cup red onion, finely minced (optional)

  • ½ cup red grapes, halved or ¼ cup dried cranberries

  • ¼ cup chopped pecans or sliced almonds (optional)

  • 1–2 tbsp fresh parsley or dill, chopped

  • Salt & pepper, to taste

  • Squeeze of lemon juice (brightens it up)

For assembling:

  • 4–6 buttery croissants

  • Optional add-ons: lettuce, tomato slices, spinach, or cheese


Instructions

1. Make the chicken salad

  1. In a large bowl, mix:

    • Chicken

    • Mayonnaise

    • Celery

    • Onion

    • Grapes/cranberries

    • Nuts (if using)

    • Fresh herbs

  2. Add Dijon mustard and lemon juice if you like extra flavor.

  3. Season with salt and pepper to taste.

  4. Chill for at least 20–30 minutes for the flavors to blend.


2. Prepare the croissants

  • Slice croissants horizontally.

  • If you want them warm and flaky, place in a 300°F (150°C) oven for 3–4 minutes.


3. Assemble the sandwiches

  • Add a leaf of lettuce or spinach (helps keep croissant from getting soggy).

  • Scoop a generous mound of chicken salad onto the croissant.

  • Add tomatoes or cheese if desired.

  • Close and serve immediately!


⭐ Tips & Variations

  • Sweeter version: Add more grapes or use honey-roasted pecans.

  • Savory version: Add chopped pickles, bacon bits, or garlic powder.

  • Healthy version: Replace half the mayo with Greek yogurt.

  • Meal prep: Make chicken salad ahead; assemble croissants just before serving.
