Beef Chow Mein Casserole

Ingredients (Serves 4–6)

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup beef broth

  • 2 tbsp soy sauce

  • 1 tsp sugar (optional)

  • 1 bag (12 oz) frozen stir-fry vegetables or mixed veggies

  • 1 can (5 oz) chow mein noodles

  • Salt & black pepper, to taste

  • Optional: 1 cup shredded cheddar or mozzarella cheese


Instructions

  1. Preheat Oven
    Preheat to 350°F (175°C). Grease a 9×13 baking dish.

  2. Cook the Beef
    In a skillet, brown ground beef with onion and garlic.
    Drain excess grease. Season lightly with salt and pepper.

  3. Make the Sauce
    Stir in cream of mushroom soup, beef broth, soy sauce, and sugar.
    Simmer 2–3 minutes.

  4. Assemble

    • Spread beef mixture into the baking dish.

    • Stir in vegetables.

    • Sprinkle chow mein noodles evenly on top.

    • Add cheese if using.

  5. Bake
    Cover loosely with foil and bake 25 minutes.
    Uncover and bake another 10–15 minutes until bubbly and lightly crisp.

  6. Serve
    Let rest 5 minutes before serving.


Tips & Variations

  • Crunchier top: Add half the noodles at the end of baking

  • No canned soup: Use 1 cup béchamel or homemade mushroom sauce

  • Extra flavor: Add ginger, sesame oil, or a splash of Worcestershire

  • Make it lighter: Use ground turkey and low-sodium soup
