Beer-braised sausages with onions

Here’s a simple, hearty recipe for Beer-Braised Sausages with Onions 🌭🧅
(Note: the alcohol cooks off during braising, but this is still a dish meant for adults.)


Beer-Braised Sausages with Onions

Ingredients

  • 4–6 sausages (bratwurst, Italian, or other fresh sausages)
  • 2 large onions, thinly sliced
  • 2 tbsp butter or oil
  • 1 tsp sugar (optional, helps caramelize onions)
  • 1 tsp mustard (Dijon or whole-grain)
  • 1 cup beer
  • Salt and pepper to taste
  • Optional: thyme or bay leaf

Instructions

  1. Brown the sausages
    Heat a skillet over medium heat with a little oil. Brown sausages on all sides. Remove and set aside.
  2. Cook the onions
    In the same pan, add butter/oil and onions. Cook slowly until soft and golden, about 10–15 minutes. Add sugar if using.
  3. Deglaze with beer
    Pour in the beer, scraping up any browned bits. Stir in mustard and herbs.
  4. Braise
    Return sausages to the pan. Cover and simmer on low for 15–20 minutes, until sausages are cooked through and flavorful.
  5. Finish
    Season with salt and pepper. Uncover for a few minutes if you want the sauce thicker.

Serving Ideas

  • Serve with mashed potatoes, crusty bread, or sauerkraut
  • Great with pretzel rolls or over buttered noodles

No-alcohol option

You can replace the beer with apple juice, chicken broth, or non-alcoholic beer and still get great flavor.
