  • 1 (8 oz) can tomato sauce
  • 1 cup beef or chicken broth
  • 2 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 8 oz uncooked pasta (rotini, penne, or broken lasagna noodles)
  • 1 cup ricotta or cottage cheese
  • 1–1½ cups shredded mozzarella
  • Salt & pepper to taste
  • Fresh basil or parsley for garnish

Instructions

1. Brown the Meat

  • Heat skillet over medium-high heat
  • Cook ground meat + onion + garlic until browned
  • Drain excess fat

2. Add Sauce & Pasta

  • Stir in tomatoes, tomato sauce, broth, and seasonings
  • Bring to a simmer
  • Add uncooked pasta, cover, and simmer 10–12 minutes, stirring occasionally, until pasta is tender

3. Add Cheeses

  • Lower heat to medium-low
  • Dollop ricotta or cottage cheese over the pasta, then sprinkle mozzarella
  • Cover 2–3 minutes until cheese melts

4. Serve

  • Garnish with fresh basil or parsley
  • Optional: sprinkle Parmesan for extra flavor

Tips for Perfect Skillet Lasagna

  • Don’t overfill the skillet—pasta needs space to cook evenly
  • Stir gently after adding cheese to keep layers somewhat intact
  • Add a splash of milk or cream for extra creaminess
  • For a healthier twist: use lean turkey and whole wheat pasta
