Ingredients

  • 1 cup brown sugar
  • 1/4 cup heavy cream
  • 1/2 tsp salt
  • 1 tsp vanilla extract

For the chocolate topping:

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp heavy cream (optional, for smoother topping)

Instructions

1. Prepare the Base

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix crispy rice cereal, crushed graham crackers, melted butter, and brown sugar.
  3. Press evenly into a greased 8×8-inch baking pan.
  4. Bake for 8–10 minutes, then let cool slightly.

2. Make the Caramel

  1. In a saucepan, melt butter over medium heat.
  2. Stir in brown sugar and heavy cream, bring to a gentle boil for 3–4 minutes.
  3. Remove from heat and stir in vanilla and salt.
  4. Pour the caramel over the baked base, spreading evenly. Let it set slightly.

3. Add Chocolate Layer

  1. Melt chocolate chips (with cream if using) in a microwave or double boiler.
  2. Pour over the caramel layer and spread evenly.
  3. Refrigerate for 1–2 hours until firm.

4. Cut & Serve

  • Lift out using parchment paper edges, cut into squares or bars.
  • Keep refrigerated if your kitchen is warm, or store in an airtight container.

Tips & Variations

  • Add chopped nuts (pecans or almonds) to the caramel layer for crunch.
  • Use milk chocolate or dark chocolate depending on taste.
  • Sprinkle a pinch of sea salt on top for a salted caramel twist.
