Mashed Potato Muffins

Ingredients

  • 2 cups mashed potatoes (cold or room temp; plain or lightly seasoned)
  • 1 large egg
  • ½ cup shredded cheese (cheddar, mozzarella, or parmesan)
  • 2 tbsp melted butter or olive oil
  • 2 tbsp milk or cream (optional, for softer texture)
  • 2 tbsp chopped green onions or chives (optional)
  • Salt & pepper to taste
  • Optional add-ins: cooked bacon bits, garlic powder, herbs, sour cream

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.
  2. In a bowl, mix mashed potatoes, egg, butter, and milk until smooth.
  3. Fold in cheese, seasonings, and any add-ins.
  4. Spoon mixture into muffin cups, filling about ¾ full.
  5. Sprinkle extra cheese on top if desired.
  6. Bake 25–30 minutes, until tops are golden and slightly crisp.
  7. Let cool 5 minutes, then remove and serve.

  • Crispier edges: Brush muffin tops with melted butter before baking.
  • Loaded version: Add bacon, cheddar, and a dollop of sour cream in the center.
