🇭🇺 Hungarian Beef & Barley Soup

Serves: 6
Cook time: ~1½–2 hours (slow simmer = best flavor)

Ingredients

  • 1½ lb beef chuck, cut into bite-size cubes
  • 2 tbsp oil or lard
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp Hungarian sweet paprika
  • ½ tsp caraway seeds (optional but traditional)
  • 1 cup pearl barley, rinsed
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 small parsnip or potato, diced (optional)
  • 8 cups beef broth or water
  • 1 bay leaf
  • Salt & black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Heat oil/lard in a large pot. Sauté onion until golden.
  2. Add garlic, remove from heat briefly, stir in paprika (prevents bitterness).
  3. Add beef, return to heat, and brown lightly.
  4. Add barley, vegetables, bay leaf, caraway, salt, and pepper.
  5. Pour in broth, bring to a gentle boil.
  6. Reduce heat and simmer 90 minutes, stirring occasionally, until beef and barley are tender.
  7. Adjust seasoning and garnish with parsley.

Flavor note: This soup should be rich but not spicy — paprika gives warmth, not heat.


🧀 Cheesy Paprika Bread

Perfect for dunking into the soup

Makes: 1 loaf or 10–12 rolls

Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp sugar
  • 2¼ tsp dry yeast
  • 1 tsp salt
  • 1 tsp Hungarian sweet paprika
  • 1 cup warm milk
  • 2 tbsp butter, melted
  • 1 cup grated cheese (Trappista, cheddar, or Gouda)
  • 1 egg (for brushing)

Instructions

  1. Mix flour, sugar, yeast, salt, and paprika.
  2. Add warm milk and butter; knead into soft dough.
  3. Knead in half the cheese.
  4. Cover and rise 1 hour until doubled.
  5. Shape into loaf or rolls.
  6. Brush with beaten egg, sprinkle remaining cheese on top.
  7. Bake at 375°F / 190°C for 25–30 minutes until golden.

🥣 Serving Tip (Very Hungarian)

  • Serve soup piping hot
  • Thick slices of cheesy bread on the side
  • Optional: a little hot paprika paste for those who like heat
