🥚 Creamy Deviled Egg Macaroni Salad

Ingredients

  • 2 cups elbow macaroni (uncooked)
  • 6 large eggs, hard-boiled
  • ¾ cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar or pickle juice
  • 1 tsp sugar (optional, for balance)
  • ½ tsp paprika (plus more for garnish)
  • Salt & black pepper, to taste

  • ¼ cup finely diced celery
  • ¼ cup diced red onion
  • 2 tbsp sweet relish or chopped pickles
  • Fresh chives or parsley

Instructions

  1. Cook the macaroni
    Boil in salted water until al dente.
    Drain and rinse under cold water to cool completely.
  2. Prepare the eggs
    • Chop 4 eggs.
    • Slice remaining 2 eggs for garnish (optional).
  3. Make the deviled dressing
    In a bowl, whisk mayonnaise, mustard, vinegar (or pickle juice), sugar, paprika, salt, and pepper.
  4. Combine
    Add cooled macaroni, chopped eggs, and optional add-ins.
    Gently fold until evenly coated.
  5. Chill
